Serves: 10
Ingredients:
- 50 grams vermicelli noodles

10 rice paper rounds (22cm diameter)

1 cup cabbage, finely shredded

1 large carrot, grated

2 Lebanese cucumbers, cut into fine strips

1 bunch mint

1/2 barbecued chicken
-
1/4 cup hoisin sauce

1/2 bunch chives
-
1 tbs lime juice
-
2 tbs crunchy peanut butter
Method
- Prepare noodles as per packet instructions. Rinse under cold water.
- Meanwhile, remove meat from chicken, discarding skin and bones. Shred meat and set aside.
- Working with 1 sheet of rice paper at a time, dip into warm water for about 10 seconds, turning until it begins to soften. Drain excess water. Lay on a clean work surface.
- Place 2 mint leaves (shiny side down) 4cm in from wrapper edge closest to you. Top with some cabbage, carrot, cucumber, 2 tbs noodles and 2 tbs shredded chicken.
- Fold base and sides of wrapper over filling, place 2-3 mint leaves (shiny side down) and a few chives and roll up firmly to enclose. Transfer to a plate and cover with a damp cloth, then repeat.
- For dipping sauce, combine all ingredients with 1/4 cup water and mix well. Cut rolls in half. Serve with sauce.
